PROCESS

AN UNTOUCHED PROCESS FOR CENTURIES

 

Our process is not a secret as it has been untouched for centuries.
We select the best apples from the cidery farm
and follow a very precise and traditionnal guideline.

 
 
 
PICKING
From mid-September to mid-December, we pluck the apples from the trees and place them in baskets. We don't shake the trees in order to harvest the fruits, but rather wait for them to fall naturally.

WASHING

MACERATION
By exposing it for 1 hour to the oxygen present in the air, the apples are turned into a sweet brownish liquid.

CHARITY The apple marc that remains after this step is offered graciously to the local pigs.

SORTING
Before washing them, we select the most beautiful apples manually. No rotten or damaged apples are used in the process.
