AN UNTOUCHED PROCESS FOR CENTURIES
Our process is not a secret as it has been untouched for centuries.
We select the best apples from the cidery farm
and follow a very precise and traditionnal guideline.
From mid-September to mid-December,
we pluck the apples from the trees and place
them in baskets. We don't shake the trees
in order to harvest the fruits,
but rather wait for them to fall naturally.
Before washing them, we select
the most beautiful apples manually.
No rotten or damaged apples are
used in the process
By exposing it for 1 hour to the oxygen
present in the air, the apples are turned
into a sweet brownish liquid.
The apple marc that remains
after this step is offered graciously
to the local pigs.
The cellar master is the MC,
he selects and blends what will soon
become Aval Cider
